Up the street, on the curvy Glencoe, Smokey Castle Coffee makes it’s home. Secluded and quiet it’s not hard to understand where the sense of focus comes from. What makes Smokey Castle Coffee different? It’s not only the detailed building of their own coffee roaster, but the passion behind the process itself.
Austin and his father built their massive wood fire coffee roaster in a farmer like fashion. Starting with scrap metal and treadmill pieces, through trial and error they have updated to an roasting assembly line of perfection. It is an impressive set up.
Why build it? Why not buy it? Here’s where the passion behind the process comes in. A majority of coffee roasters use gas to roast their beans, whereas the Smokey Castle crew harnesses the power of flame with different woods and roasting times. How does it affect the beans? When using gas to roast coffee often the beans will be left with a shiny, greasy film due to the temperature that they are roasted at. This essentially means a lot of the flavour is now outside of the bean and not sealed inside for grinding. When roasting, wood is a much dryer heat; omitting humidity provides the best conditions to help seal and preserve more of the lipids within the bean. This helps to deliver a deeper, earthy, and more natural taste.
Let’s put this simply: If given the choice would you rather cook using gas, or wood. There is something extra delicious about food roasted with fire, is there not? Coffee beans are much the same. Other benefits? FRESH! Once you go fresh, you’ll never go back. With fresh beans you are taken to a magical place with each cup.
